Fleur de Cacaoyer - Chocolat

Ganache...the very word makes one dream. It evokes in itself all the pleasure of a great chocolate. One which melts slowly, liberating all its aroma ; its power. A dark chocolate of great character, creamy, lasting and lingering in the mouth, letting itself be seduced by the cream to become even more voluptuous, delicate and melting. We discover like this, in all its purity, the dark or black cream. We can taste it as well, impregnated by the soft flavours of citrus fruit, cooked in sugar, this is the dark cream and candied orange. In its own pot the cream clots to remelt once more before your very eyes when you place it on a crepe still hot from the pan. It can be moulded with spoons and placed next to an ice cream or mixture of fruits in a salad. To invent new delights with the cream is a part of his vocation and makes up Joël’s pleasure.
